Ingredients for 12 servings

1 cup Japanese short-grained sushi Rice

54 x pickled grape vine leaves

6 tbsp olive oil

1/2 cup diced roasted bell pepper, both red and green

1 x red onion, finely chopped

5 x pearl onions, finely chopped

2 x garlic cloves, finely minced

3/4 tsp ground cumin

1 tsp salt

1/2 tsp black pepper, freshly ground

2-1/2 cups homemade vegetable stock, (or canned vegetable broth or water)

2 tsp lemon zest

1/2 cup lemon, zested and juiced

3 tbsp curly parsley, finely chopped

2 tbsp fresh dill, finely chopped

1-1/2 tbsp fresh mint leaves finely chopped
