Ingredients for 4 servings

2 large cucumbers

2/3 lb shrimp, preferably shells on (optional

about 1/4 cup of roughly chopped Vietnamese Perilla (use more or less to taste)

about 1/4 cup cilantro leafs (use more or less to taste)

1 cup shallots, cut into thin slices

1/4 cup coconut flakes (desiccated coconut)

about 1/4 cup fish sauce

3 tbsp lime juice

about 2 tablespoon rice vinegar

about 1 tablespoon of palm sugar (white sugar will do just fine, but start with only 1/2 tablespoon)

5-10 x Thai bird-eye chilli, chopped (to taste)
