12 oz extra-firm nigari tofu

1 x grated zest of lemon

1 x Fresh ginger, cut into a 1-inch cube, peeled, and grated

2 tbsp Honey

scant 1/2 tsp Cayenne

3/4 tsp fine grain Sea Salt

1 tbsp freshly squeezed lemon juice

1/4 cup unseasoned brown Rice Vinegar

1/3 cup Shoyu sauce

2 tbsp extra-virgin olive oil

2 tbsp toasted Sesame Oil

2 medium Shallots, finely chopped

2 cup pecans, toasted

1 loosely packed cup Cilantro Leaves/stems, chopped

6 cup Cooked Wild Rice
