Ingredients for 4 servings

1 large red bell pepper , diced

1/2 teaspoon ground cumin (or to taste)

1 tablespoon finely chopped fresh oregano or 1 teaspoon crumbled dried oregano (or to taste)

For the chicken

2 tablespoons fresh lime juice (or to taste)

4 corn tortillas , cut into long thin triangles

1 bunch arugula , washed well and spun dry

3 scallions , sliced thin

For the tortilla crisps

2 boneless chicken breasts , with the skin about 1 1/2 pounds,halved

vegetable oil, for frying the tortillas

1 teaspoon dried oregano , crumbled

2 cups cooked fresh corn kernels (cut from about 4 ears)

1/4 cup olive oil

vegetable oil, for brushing the chicken

1/2 cup fresh lime juice
