Salt and pepper to taste

1 cup diced leftover rotisserie chicken meat

1/3 cup chicken stock

2 tablespoons vegetable oil

1 small dried red chile

1/2 pound bok choy or napa cabbage, trimmed and diced

1/4 pound shiitake mushrooms, stemmed and diced

3 green onions, trimmed and sliced

2 cups cold, leftover cooked rice

1 tablespoon soy sauce

Small red chiles, for garnish (optional)
