  • -- Cornmeal for dusting sheet pan
  • 11/3 cups sauerkraut or to taste
  • 1/4 cup whole-grain mustard
  • 1/4 cup dijon mustard
  • 1 to 2 firm sweet apples, like fuji or gala
  • 1 large thinly sliced red onion, caramelized (optional, see Note)
  • 8 ozs smoked trout, flaked
  • 4 ozs grated mozzarella
  • 4 ozs grated monterey jack
  • -- Kosher salt
  • -- Freshly ground black pepper to taste
  • -- Fruity extra virgin olive oil to drizzle
  • -- Finely grated zest from 1 large lemon
