Ingredients

Chicken and carrots:

1 teaspoon unsalted butter

Olive oil

6 medium-size carrots, sliced on bias 1/8 inch thick

3 garlic cloves

1 large sprig rosemary

4 large chicken breast halves (with skin on)

Sauce:

4 shallots, sliced

2 garlic cloves, sliced lengthwise

1 sprig thyme

1 cup dry white wine

3 cups unsalted chicken stock

1/2 cup cream

3 ounces unsalted butter, cut into small pieces

Salt and cayenne pepper

Mashed potatoes:

2 pounds Yukon Gold potatoes

3 ounces unsalted butter

1/2 cup cream, heated
