Freshly ground black pepper

1 medium yellow bell pepper, cored, seeded, and cut into 1-inch pieces

1 Tbs. chopped fresh rosemary

1 medium red bell pepper, cored, seeded, and cut into 1-inch pieces

1-1/2 Tbs. honey

1 chicken (3-1/2 to 4 lb.), cut into quarters

14-1/2-oz. can diced tomatoes, drained

2 Tbs. balsamic vinegar

3 Tbs. olive oil
