2 Tbs. chopped fresh cilantro

1/2 red bell pepper, diced (to yield 1/2-cup)

Salt and freshly ground black pepper to taste

2 tsp. coarse salt; more to taste

2 tsp. chopped fresh oregano

Freshly ground black pepper

1 to 2 jalapeños, cored, seeded, and minced

1/2 cup mayonnaise

2 small fresh poblano or 4 Anaheim chiles (or other medium-hot chiles), cored, seeded, and diced (to yield 3/4 cup)

6 Tbs. olive oil; more as needed

6 eggs

2 Tbs. minced garlic

3 Tbs. salsa or adobo sauce

1 small onion, diced (to yield 1 cup)

1 Tbs. fresh lime juice

6 sprigs fresh cilantro
