  • 1 (15 oz) can of organic butterbeans rinsed and drained
  • 1 cup thinly sliced shallots
  • 3 Tbsps grapeseed oil
  • ½ cup eco.love Riesling
  • 1 Tbsp good quality cognac
  • 1 Tbsp agave nectar
  • 1 tsp white truffle oil* + a bit more for drizzle on top of finished product (see * above)
  • 1 ½ Tbsps capers packed in sea salt, lightly rinsed
  • pinch of sea salt
