Ingredients for 6 servings

1 cup finely chopped onion

2 tablespoons chopped fresh cilantro leaves

2 tablespoons chopped fresh parsley leaves

2 cups tomatoes, peeled, seeded and chopped

4 tablespoons olive oil

2 pounds peeled and deveined large shrimp (size 21 to 25 count)

2 quarts vegetable oil, for frying

1 tablespoon minced garlic

2 pounds okra, both ends trimmed and halved lengthwise

1/4 cup Piri Piri, recipe follows

2 teaspoons salt

2 tablespoons Essence, recipe follows

3/4 cup reduced shrimp stock
