1 english cucumber, unpeeled and chopped

3 medium tomatoes, seeded and chopped

1/2 red onion, chopped

1 (15-ounce) can organic no-salt chickpeas, rinsed and drained

11/2 cups chopped cooked chicken or shrimp

1/2 cup fresh Italian parsley, chopped

2 tablespoons extra-virgin olive oil

3 tablespoon lemon juice

2 tablespoons red wine vinegar

1 teaspoon dijon mustard

1/4 teaspoon fresh ground black pepper, to taste

2 ounce low-fat feta cheese, crumbled

1/2 teaspoon paprika for garnish
