i substituted honey for sugar and replaced 1/2 cup of white flour with whole wheat flour. extremely moist! not too sweet!

Ingredients

1 1/2 cups all purpose flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 1/2 teaspoons cinnamon

2 eggs

1/4 cup vegetable oil

1/4 cup unsweetened applesauce

1/4 cup sugar/stevia blend (I used Sun Crystals)

1/2 cup + 1 Tablespoon brown sugar

1-1/2 teaspoons vanilla extract

2 cups grated zucchini
