1/2 cup dry roasted almonds

1/2 cup (1 stick) unsalted butter, softened

2 garlic cloves, minced

1/3 cup chopped white or yellow onion (half of one medium onion)

2 heaping tablespoons chopped parsley

2 tablespoons lemon juice

1 teaspoon lemon zest

2 teaspoons mined jalapeno (seeds removed)

1/4 to 1/2 teaspoon crushed red pepper flakes

salt to taste

4 pounds mussels, scrubbed and debearded

1/2 cup dry white wine
