  • 2 1/2 Tbsps olive oil
  • 2 Tbsps thinly sliced shallots
  • 1 Tbsp Dijon mustard
  • 1/4 tsp black pepper
  • 1/8 tsp salt
  • 1 (6-oz) can solid white tuna in water, drained and flaked
  • 1 1/2 Tbsps fresh lemon juice
  • 1 avocado
  • 1 cup cherry tomatoes, quartered
  • 1/3 cup shredded Swiss cheese
  • 2 (6-oz) pieces French bread, halved lengthwise and toasted
