1 tablespoon finely chopped garlic

1/2 teaspoon salt

2 shallots, chopped

2 tablespoons chopped walnuts

4 teaspoons white-wine vinegar

2-3 tablespoons water

1/3 cup chopped pitted dates

1 cup bulgur, (see Shopping Tip)

12 cups thinly sliced mustard greens, (about 1 bunch), tough stems removed
