Quite good, but I think this could use something tangy in the salmon mixture like mustard or... something. Wasn't as flavorful as I was hoping

I used "crunch master" brand crackers to make cracker meal. It was the only gluten free crackers I had on hand. Worked perfectly fine and it's a great recipe. Everyone loved it. Make 2 if your family is really hungry.

Ingredients for 5 servings

1 can salmon (6 ounces), drained

1/2 cup cracker meal or dry breadcrumbs

1 large egg, beaten

1/4 red bell pepper, finely chopped

1 tablespoon fresh dill, chopped

2 tablespoons vegetable oil

Mixed greens, for serving

1/4 cup mayonnaise

Juice of 1/2 lemon

5-10 fresh chives, finely chopped

Salt and pepper
