1 cup blanched snap peas

12 ounces of butter

2 tablespoons dijon mustard

2 cups rice stick noodles, soaked in hot water

LEMON GRASS CAPER BROWN BUTTER VINAIGRETTE

Juice of 1 lime

1 cup blanched snow peas

1 cup cornmeal

2 sliced shallots

1/2 cup lemon juice

rice noodle AND PEA SALAD

8 thai basil leaves, chiffonade

Salt and black pepper to taste

4 stalks minced lemon grass, white part only

Brown butter vinaigrette
