1/2 cup small halved cherry tomatoes, like Sweet 100s

1/2 cup medium-dice Asian pear

1/2 tablespoon minced shallot

Juice of 1/2 lemon, plus additional to taste

Kosher salt and pepper to taste

1-1 1/2 pounds mild, white boneless, skinless fish fillet like tilapia, trout or catfish

All-purpose flour for dredging

Vegetable oil

Chopped parsley for garnish (optional)
