Ingredients for 4 servings

SMOKY CAESAR DRESSING

1 tablespoon red wine vinegar

4 cups sweet curly Romaine leaves, washed, dried and torn into large pieces

1/4 cup Queso Anejo cheese

1 tablespoon Worcestershire sauce

11/2 cups olive oil

CHILE CROUTONS

1 teaspoon capers

2 teaspoons Too Hot Tamales chile powder (refer to recipe)

1 teaspoon freshly ground black pepper

1/4 cup olive oil

8 anchovy fillets

1 to 2 canned Chipotles

Salt and freshly ground black pepper, to taste

Juice of one lemon

1 tablespoon mayonnaise

10 anchovy fillets

1/2 cup Smoky Caesar Dressing (recipe below)

Few drops hot sauce

8 slices French or Italian bread, cut into 3/4 inch cubes

8 garlic cloves, cooked slowly in olive oil until soft

Spicy croutons (recipe below)

1 teaspoon Dijon mustard
