Ingredients

1 cup all-purpose flour

1 tbsp Sugar

1/2 tsp baking powder

6 tbsp unsalted butter, cold, cut into small pieces

3 oz cream cheese, cold

all-purpose flour for dusting

1 1/2 cup sugar plus 2 tbsp

1 x Vanilla Bean, split lengthwise, seeds scraped

1 small red Beet , well scrubbed, cut into wedges

1 1/2 lb rhubarb, leaves trimmed and stalks sliced diagonally into 2-inch pieces

4 oz cream cheese, room temperature

1 x zest of a lemon

1/4 cup sour cream
