1 small shallot, roughly chopped

1/4 cup cider vinegar

1/4 cup grapeseed oil, or other light vegetable oil

1/4 cup extra virgin olive oil

2/3 cup pumpkin seeds, toasted

1 teaspoon cumin seeds, toasted

1 small kabocha squash

1 large head of frisee, cleaned

1 small head radicchio, cleaned and roughly chopped

1/4 cup pomegranate seeds
