  • 1 1/4 cups sugar
  • 1 1/4 cups unbleached all-purpose flour
  • 1 tsp vanilla extract
  • 8 Tbsps unsalted butter , softened but still cool
  • 1 cup sugar
  • 3 large eggs , at room temperature
  • 2 tsps instant espresso or instant coffee powder
  • 1/4 cup nonalkalized cocoa (Hershey's)
