1/2vegetable oil + 1 Tb.vegetable oil + 1 Tb.vegetable oil + 1 Tb. cup vegetable oil + 1 Tb.

1 1/2 tsp Mustard Seeds

1/2 tsp Fenugreek Seeds

12-15 x curry leaves, finely chopped

2-3 small dried red chiles (cayenne, bird)

4 cup chopped red onion

2 1/2 Tb. grated ginger

1 tsp chili powder

1 1/2 Tb. ground coriander

1 tsp turmeric

1/2 cup chopped cilantro (leaves and/or stems)

3 cup chopped tomatoes

2 Tb. fresh lime juice

1 tsp salt

1 cup unsweetened coconut milk
