4 cups chicken broth

2 cups dry white wine

2 leeks, white parts only, sliced lengthwise, rinsed and chopped

2 cups arborio rice

1 cup freshly grated Parmesan cheese

2 cups baby spinach

2 tablespoons fresh lemon juice

zest of one lemon

salt + pepper
