4-6 cups mixed baby lettuce, such as mache or mesclun

1 cup cooked chestnut lima beans

3 hard cooked eggs, sliced in half

3/4 cup feta cheese, crumbled

2 small avocados, pitted, sliced lengthwise

10-12 small pear or cherry tomatoes, sliced in half

1-2 small Persian cucumbers, sliced

1/4 cup green onions sliced, white & halfway up greens

1/2 cup red wine vinegar

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon Bragg Liquid Aminos or soy sauce

1 teaspoon kosher salt

1 teaspoon freshly ground black pepper

3/4 cup safflower oil

3/4 cup extra-virgin olive oil
