1 cup uncooked brown rice

1 Tbs. olive oil

1/2 cup chopped onion

2 cloves garlic, minced

1/2 large red bell pepper, chopped ( 1/2 cup)

1 medium stalk celery, chopped ( 1/2 cup)

4 sprigs fresh flat-leaf parsley
