2 onions, finely chopped

8 cups cubed whole-wheat country bread, (1 pound)

1/2 teaspoon freshly ground pepper

1/3 cup chopped fresh flat-leaf parsley

2/3 cup dried cranberries

1 teaspoon salt

1 1/2 pounds fresh chestnuts, or two 7 1/2-ounce jars vacuum-packed cooked chestnuts

1 tablespoon olive oil

1-1 1/2 cups reduced-sodium chicken broth

1/2 pound mushrooms, wiped clean, trimmed and sliced
