3 green onions, minced

3 cloves garlic, minced

1/4 cup minced gingerroot

1/2 cup brown sugar


4 pieces skinless wild salmon (5 ounces each)

2 tablespoons vegetable oil

1 teaspoon black pepper

4 torpedo rolls or soft rolls, split in half lengthwise

4 tablespoons tartar sauce or mayonnaise

2 cups grated carrot

2 seeded, slivered jalapeno peppers, or to taste

1/2 bunch washed cilantro
