1/2 tablespoon salt

8 sprigs thyme

1/4 cup Wondra Flour

2 quarts swanson low sodium chicken broth

TURKEY STOCK FOR GRAVY (using breast bone)

3 shallots , cleaned and sliced

1 tablespoon peppercorn

3 tablespoons butter

1 tablespoon sugar

2 tablespoons orange zest

3 celery ribs , washed and choppped in 1 inch pieces

BRINE

1 lb baby portabella mushroom , sliced

2 carrots , washed and chopped in 1 inch pieces

1 1/2 cups water

1/2 cup orange juice

MUSHROOMS

1 tablespoon white peppercorns

2 bay leaves
