1/4 cup grapeseed or canola oil

1/4 cup queso fresco or goat feta cheese, crumbled

2 tbsp cilantro

1 cup green beans, chopped

1 cup zucchini, chopped

3/4 cup fresh corn kernels (if not available, can substitute frozen)

1 1/2 cups fresh spinach

1/2 cup firm tofu, diced

1 onion, chopped

2 garlic cloves, peeled & chopped

2 tbsp olive oil

salt & pepper
