1 (13 ounce) can tomatillos, undrained,chopped

1 cup mild cheddar cheese , shredded

2 medium onions , sliced thinly

2 lbs boneless pork shoulder , fat removed and cut into 1 1/2 inch cubes

2 cloves garlic , minced

1/4 cup cilantro , coarsley chopped

2 frsh poblano chiles , roasted,seededand deveined or anaheim chilies

1/2 cup vegetable oil

6 tomatoes , slices cut in half

8 corn tortillas , cut in half then into 1/2 " strips

1 teaspoon salt

1 cup monterey jack cheese , shredded

1/2 cup light sour cream or single cream

fresh sprigs cilantro
