Ingredients for 8 servings

4 lbs beef short ribs

2 medium or 1 large onion, chopped

2 carrots, sliced

2 parsnips, peeled and sliced

6 cloves garlic, minced

1/2 cup raisins

about 4 cups coffee-flavored porter beer (or substitute porter beer with 1/2 cup strong coffee)

about 1 cup chicken or vegetable stock

1 tablespoon tomato paste

1 cinnamon stick

1/4 teaspoon cumin

1/4 teaspoon cayenne pepper

salt and pepper to taste

olive oil

Israeli couscous for 6-8 (follow directions on package)

mint or chocolate mint sprigs for garnish, chopped (optional)
