2 rashers of smoked streaky bacon

50 g unsalted butter

150 g small round onions or shallots, peeled

150 g celery, diced

1 clove of garlic, crushed

150 g mixed wild mushrooms and field mushrooms

100 ml sherry or white wine

50 ml brandy or cognac

250 ml chicken stock

100 ml double cream

1 tsp freshly chopped thyme

Salt and freshly cracked black pepper
