1 onion , chopped

2 cloves garlic , minced

1 stalk celery , diced

1 tsp dried thyme

1 tsp paprika

1/4 tsp each salt and pepper

1/4 tsp hot pepper sauce

1-1/2 cups parboiled rice

1 large sweet potato , peeled and cubed

1 can (28 oz/796 mL) diced tomatoes

1/2 cup chicken stock

1 sweet green pepper , diced

8 oz large cooked peeled shrimp , (optional)

2 tbsp chopped fresh parsley
