2 (14 ounce) cans diced tomatoes with juice

2 tablespoons canola oil

1 tablespoon curry powder

3 cups cooked chickpeas

1/4 cup chopped cilantro

1/4 cup chopped salted peanuts (to garnish)

8 cups low sodium vegetable broth

3 garlic cloves , minced

1-2 tablespoon finely minced fresh ginger

3 cups kale , finely chopped

2 carrots , cut into 1/2-inch dice

1 lb sweet potato , peeled and cut into 1-inch chunks

6 ounces fresh okra , sliced thinly

1 cup frozen green bean

lime wedge (to garnish)

1 tablespoon tamari soy sauce (to taste)

1 lime, juice of

1 large onion , chopped

1 jalapeno, seeded and finely minced

1/2 cup natural-style peanut butter
