4 bulbs wet garlic , peeled but cloves left whole, or 2 bulbs of normal garlic, chopped

½ bottle white wine

150.0g shallots , finely chopped

bouquet garni , a sprig of thyme, parsley stems and a bay leaf tied together

a small bunch of parsley , leaves chopped

142.0ml double cream

150.0g pancetta or streaky bacon, cut into strips

a generous glass brandy

1 free range chicken , about 1.5kg
