Ingredients for 6 servings

3-1/2 cups (420 g) unbleached all-purpose flour

1 cup (128 g) whole wheat flour

1 cup (80 g) quick-cooking oats, plus additional for sprinkling

2 tablespoons baking powder

2 tablespoons granulated sugar

2 teaspoon salt

1 pound (4 sticks/453 g) cold unsalted butter, diced

1/2 cup (120 ml) cold buttermilk (or 1 tablespoon vinegar + milk to make 1/2 cup)

1/2 cup (120 ml) pure maple syrup

4 extra-large eggs, lightly beaten

1 egg beaten with 1 tablespoon milk or water, for egg wash (You can also use plain milk.)

1-1/4 cups (32 g) confectioners’ sugar, sifted

1 teaspoon pure vanilla extract
