Ingredients

6 large eggs

4 tbsp (or 1/4 cup) mayonnaise

1 tbsp basil pesto

1/4 tsp salt

1/3 cup finely chopped oil-packed dried tomatoes, drained

1 baguette, sliced into 1/2-inch pieces

1-2 tbsp extra virgin olive oil (for brushing on bread)

4-6 oz fresh mozzarella, thinly sliced (no more than 1/8-inch thickness)

Fresh basil thinly sliced into 'ribbons' for garnish
