  • 1 onion , chopped
  • 3 garlic cloves , minced
  • 4 cups button mushrooms , quartered (about 8 oz/250 g)
  • 1 carrot , chopped
  • 1 celery stalk , chopped
  • 1 tsp crumbled dried rosemary
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 can (28 oz/796 mL) diced tomatoes
  • 1/3 cup tomato paste
  • 1 tbsp balsamic vinegar
  • 5 cups water
  • 3/4 tsp salt
  • 1 cup cornmeal
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp extra virgin olive oil
