1/2 cup diced pineapple (or canned well drained crushed pineapple)

1 tablespoon soy sauce

1 tablespoon toasted sesame oil

3 tablespoons vegetable oil, divided

1/2 teaspoon sugar

1/4 cup green onion , sliced thin

1/4 cup chopped onion

1 cup dry roasted salted cashews , coarsely chopped

2 eggs , well beaten

2 tablespoons dry sherry (or white wine, vegetable broth or apple cider)

4 cups cooked brown rice (preferably long grain)

1 tablespoon garlic , chopped

2 cups frozen shelled edamame beans (or tiny peas)

1 tablespoon fresh ginger , chopped

10 fresh shiitake mushrooms (or button)
