Ingredients for 6 servings

2 tablespoons freshly squeezed orange juice

3 1/2 ounces achiote paste (available in Latin markets- it comes in a small, dark-red brick)

2 lbs boneless pork butt or pork shoulder

3 large garlic cloves , minced

10 fresh cilantro stems

2 tablespoons freshly squeezed lime juice

naked guacamole (see Naked Guacamole )

hot salsa (optional) or other salsa (optional)

sliced asadero cheese or chihuahua cheese (I used provolone)

sliced ripe roma tomato

1/2 teaspoon kosher salt

6 large soft white sandwich buns or a baguette

shredded lettuce or cabbage

sliced red onion

To Serve

pickled jalapeno peppers
