  • 1/2 cup light coconut milk
  • 2 Tbsps lemon juice
  • 2 lbs mussels , scrubbed and debearded
  • 1 Tbsp sugar
  • 1/4 cup chopped fresh basil
  • 1 dash salt
  • 2 tsps red curry powder
  • 1 (14 1/2 oz) can reduced-sodium fat-free chicken broth
