  • 1 lb asparagus spears
  • 2 Tbsps olive oil
  • Salt
  • Freshly ground black pepper
  • 8 cups arugula
  • 1 pint yellow cherry tomatoes, halved
  • Creamy Lemon-Shallot Vinaigrette
