1 can of organic black beans, drained and rinsed

1/2 lemon, juiced

1 tablespoon of extra-virgin olive oil

2 tablespoons of parsley, minced

1 teaspoon of coriander, ground finely

1/2 teaspoon of thyme

2 tablespoons of flour

salt and pepper, to taste

whole-wheat hamburger buns

cheddar cheese slices (New York white, preferably)

1 tomato, thinly sliced

lettuce leaves

pickled red onion (optional)
