Ingredients for 4 servings

1/4 cup Extra Virgin olive oil

4 tbsp fresh lemon Juice

1 tbsp rice Wine vinegar

1 tbsp finely chopped fresh mint

1 tsp finely chopped fresh dill

1 tbsp finely chopped Italian parsley

2 zucchini, sliced paper thin

2 cucumbers, sliced paper thin

1/2 tsp Kosher or sea salt

1/2 cup crumbled feta Cheese

1/4 cup finely chopped, roasted walnuts

fresh cracked black Pepper
