Made this last night. Was Sooo yummy. Make sure to not over dress. Not needed. Very light and wonderful textures and flavors.

Ingredients for 4 servings

1/4 cup Extra Virgin Olive Oil

4 tbsp fresh Lemon Juice

1 tbsp Rice Wine Vinegar

1 tbsp finely chopped fresh Mint

1 tsp finely chopped fresh Dill

1 tbsp finely chopped Italian Parsley

2 Zucchini, sliced paper thin

2 Cucumbers, sliced paper thin

1/2 tsp Kosher or Sea Salt

1/2 cup crumbled Feta Cheese

1/4 cup finely chopped, roasted Walnuts

fresh cracked Black Pepper
