1 tablespoon olive oil

2 tablespoons fresh lemon juice, divided

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon minced fresh garlic

1 teaspoon grated lemon rind

1 plum tomato, seeded and chopped

1/2 small cucumber, peeled, seeded, and chopped (about 1/2 cup)

1/4 cup finely chopped fresh pineapple*

2 green onions, sliced
