1/4 cup water

1 tablespoon unsalted butter, melted

1 1/4 cups milk

1 cup all-purpose flour

1/2 cup melted butter, preferably clarified (see instructions in story) + additional unsalted butter for browning blintzes

Sour cream

Preserves of choice

Cheese Filling

1 pound farmers' cheese

1/2 cup sugar

1 large egg

1/4 teaspoon salt

Finely grated zest of 1 lemon

1 teaspoon pure vanilla
