3 large ripe pears, such as Bartlett or Anjou

1/2 lemon

6 tablespoons unsalted butter, softened

2/3 cup confectioners' sugar, sifted

2/3 cup ground almonds (about 3 1/2 ounces)

1 tablespoon cornstarch

2 teaspoons white rum

1 egg, lightly beaten

1 tablespoon granulated sugar
