Ingredients for 6 servings

4 2-inch cinnamon sticks

10 cloves

2 tablespoons salt

12 cardamom pods

3/4 cup vegetable oil

1 2-inch piece fresh ginger, peeled and coarsely chopped

2 teaspoons saffron threads

1 to 2 hot green chilies, thinly sliced

2 bay leaves

3 medium onions: 2 halved lengthwise and thinly sliced; 1 finely chopped

1/2 cup coarsely chopped fresh mint leaves

5 cloves garlic, peeled

1 teaspoon ground cumin

1/4 cup slivered almonds, toasted

1/4 cup golden raisins, plumped in hot water and drained

3 cups basmati rice, washed

2 tablespoons fresh lemon juice

1/2 cup coarsely chopped fresh coriander leaves

1/2 teaspoon cumin seeds

2 cups plain low-fat yogurt

3 tablespoons hot milk

2 cornish hens, legs halved and breasts quartered

Freshly ground pepper to taste

1 1/2 to 2 teaspoons cayenne pepper
